Healthy Zucchini & Carrot Patties for Weight Loss

Ingredients:

  • 1 zucchini (grated)
  • 1 carrot (grated)
  • 1/2 medium onion (finely chopped)
  • 2 eggs
  • Garlic cloves or garlic leaves (optional, finely chopped)
  • A few green chilies (finely chopped)
  • 1 cup flour (whole wheat or all-purpose)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground pepper
  • Salt to taste
  • 1/4 teaspoon turmeric powder
  • 1 tablespoon oil (use a healthy option like olive oil or coconut oil)

Instructions:

1. Prepare the Vegetables

  • Grate the zucchini and carrot, then place them in a large bowl.
  • Finely chop the onion and garlic (if using) and add them to the mixture.
  • Add finely chopped green chilies for a spicy kick.

2. Mix the Ingredients

  • Crack the eggs into the bowl with the vegetables, mixing them thoroughly.
  • Add flour as a binder to hold the mixture together (whole wheat flour adds more fiber).
  • Sprinkle in garlic powder, onion powder, pepper, turmeric, and salt to taste.

3. Combine Everything

  • Mix until well combined. The mixture should hold its shape when pressed. Adjust the consistency by adding more flour if too wet, or a splash of water or extra egg if too dry.

4. Heat the Oil
